For the Love of Disney Food, Quarantine Edition- Bacon Cheeseburger Macaroni & Cheese!

FOR THE LOVE OF DISNEY FOOD: QUARANTINE EDITION! BACON CHEESEBURGER MACARONI & CHEESE

I love Disney Springs. I also love a food truck. Most of you know of the food trucks that the Springs has to offer. If you don’t, it’s time to visit them once they are operating again, so good! There are a few trucks in a of couple locations. My favorite truck is the Mac & Cheese truck, located at West Side of the Springs across from Disney’s Candy Cauldron on the waterfront. In the sprit of eating Disney food quarantine style, I made the bacon cheeseburger macaroni & cheese for dinner.

If you have had the privilege of ordering off the menu at the Mac & Cheese food truck, then you already know it’s not your average macaroni & cheese. This is macaroni with a gourmet spin. There are 5 options on the menu, all delicious, but my go-to is the bacon cheeseburger mac. I don’t have a recipe for this mac, but I have a pretty good food memory. I have eaten this enough to make a copycat meal.

What you will need:

Bacon cooked till crispy, slice per person.
Macaroni cooked al dente
¾ pound ground beef
Cheddar cheese and Velveeta type cheese melt
Butter and heavy whipping cream
Shredded lettuce, tomato, pickles (relish)
Ketchup and Mustard

I don’t measure when cooking, I just go by sight and taste. I made enough macaroni for about 10 people… don’t be like me if you have a small family. Start by boiling the macaroni (don’t forget to salt your water), cooking the ground beef and put the bacon under the broiler. While all that is going, prep the toppings.

The macaroni at the truck is super creamy, so I used real cheddar cheese and Velveeta cheese melt with butter and heavy whipping cream.

Remember to drain your beef and dab the grease off the bacon. Greasy mac is not good. Once the Mac & Cheese is ready for the bowl, you can start adding all the toppings and condiments. Ketchup and mustard on mac & cheese? YES! Please, trust me. I also added onions to mine, who doesn’t love onion on their hamburger?

The most crucial step is to just savor and enjoy! It really takes me back to Disney Springs, watching all the shoppers walking by, I miss it! This was a hit for us, I hope it is for you too.
