Happy Pi Day! What better way to celebrate than with Mickey Pie Pops? These are super easy to make and are delicious. Although the recipe calls for cherry filling, you can use your favorite or better yet, use what is in season! This recipe is courtesy of Disney Family.

Ingredients

  • 1 tablespoon flour
  • 1 box refrigerated pie crust
  • 2.5″ circle cookie cutter
  • 1″ circle cookie cutter
  • 20 lollipop sticks
  • 1 can (21 ounces) cherry pie filling
  • 1 egg
  • 3 tablespoons raw sugar

Directions

  1.  Preheat oven to 425 degrees Fahrenheit.
  2.  Sprinkle flour onto working surface. Unroll piecrusts.
  3.  Use cookie cutters to cut out bigger circles and smaller circles out of the dough. You will need 2 bigger circles and 2 smaller circles for each pie pop.
  4.  Place bigger dough circles onto greased cookie sheet or baking pan. Lightly press lollipop stick into crust so it rests in the center of the circle.
  5.  Add 1/2 teaspoon of pie filling onto each pie pop.
  6.  Place two smaller circles at the top of each pie pop for Mickey’s ears.
  7.  Top pie pop with another circle of dough and use a lollipop stick or fork to press around each circle to seal the pie shut.
  8.  Beat egg in a small bowl. Brush each pie pop lightly and top with a sprinkle of sugar.
  9.  Bake in oven for 15 minutes or until golden brown.
  10.  Allow pies to cool completely before serving.

You can also use a Mickey shaped cookie cutter for these! I would recommend putting foil around the ears to prevent them from burning while the rest of the pops finish cooking.
